Hoody’s in the Kitchen

NUTTY APPLE SALAD

Ingredients:

6 medium apples
lemon juice
1/2 cup sliced celery
1/4 cup chopped green pepper
2/3 cup rough-chopped pecans or walnuts
1/2 cup raisins (a blend of dark & golden is nice)
1/2 cup mayonnaise
lettuce (chopped or whole leaves) 

Prep Work:

Cut apples into bite-sized chunks. 
Sprinkle apple chunks with lemon juice to keep their color. 
Combine apples, celery, green pepper, nuts, raisins and mayo.
Serve salad on individual beds of lettuce.
serves 4 – 8

PECAN BUTTER COOKIES

Ingredients:

1 cup butter, softened (use butter only)
1/2 cup powdered sugar
1 tsp. vanilla
2-1/4 cups flour
1/4 tsp. salt
1 cup pecans (chopped)
powdered sugar (if desired) 

Prep Work:

Cream butter with sugar thoroughly.
Beat in vanilla. 
Add flour and salt.
Mix well.
Add pecans.
Chill several hours.
Place 1" balls on ungreased cookie sheet.
Bake at 400 degrees for 9 -12 minutes.

Cook until bottoms are light-gold.
Immediately roll in powdered sugar.
Place on rack until cool.
Roll a second time in powdered sugar.
